Is it possible to trigger a workflow based on a change detected in the opportunity data from our CRM? We are in the middle of evaluating a CRM to go with, so just wanting to make sure this would be possible.

One way to do this could be via a webhook-triggered campaign: https://www.customer.io/docs/webhook-triggered-campaigns/

Assuming your CRM offers you a way to send a webhook when a change is detected in your opportunity data, you can generate a Webhook URL as part of your campaign where these webhooks can be sent to.
Using our Send Event action you can use the trigger data to be referred to in messaging or updating people’s attributes.

So, yes - this is possible, but I’d recommend you check that your CRM can send us webhooks for those opportunity data changes.
